Can I taste the spirit before buying a barrel?

The bartenders at Dive can provide you with a tasting flight of these rum offerings, which allows you to compare all four versions of the rum side-by-side, to see which one you like best. The flight costs $10, but this fee is waived if you purchase a barrel immediately after the tasting. There is no obligation to buy, but if you like what you taste, you can purchase a custom mini-barrel containing 2.8 liters (4 bottles) of custom-made spirits for $425, and your barrel will be placed in the enclosure on the north wall, next to the bar. Your mini-barrel will remain in the rack at Dive for your exclusive use. No one else can have access to your private barrel, unless you authorize it.

How will I access it?

You can enjoy your spirit at Dive Bar and The Port of Call. Feel free to share your spirit with friends - served neat, on the rocks or in a cocktail of your choice. You already purchased the spirit in advance, so if you order a serving neat or on the rocks, there is no charge to you.  Cocktails will have a small charge for the mixers. Either way, please be sure to tip your server.

How do I account for what I drink?

Each time you order a serving, the bartender at Dive will make note of the transaction. When your barrel is empty, you can end things there with no further obligation or you can arrange to taste a new round of bespoke spirits from Veritable Distillery that are available at that time. If you like what you taste, you can buy a refill, and your barrel will go back to the same spot on the wall at Dive Bar, exclusively for you. Barrel Club members receive the exclusive first-option to try new spirits from Veritable Distillery, when they become available.

Terms & Conditions

KEEPING TRACK OF YOUR BARREL - At the time of purchase, the mini-barrel will receive a printed label and numbered brass plate which will remain with the barrel at all times during handling by the Proprietor (Port City Cuisine, LLC – owners of Dive Bar and The Port of Call). It is very important that you remember your barrel number.

PRICING – Proprietor reserves the right, at its sole discretion, to set different pricing for initial purchases and subsequent refill orders.

ACCESS PRIVILEGES – When you purchase your barrel, your name and barrel number will be entered into the computer system at Dive Bar/Port of Call. To gain access to your barrel, all you need to do is provide your identification (driver’s license) and barrel number to the server. They will look you up in the computer system and record the transaction of your order. This is how the Proprietor keeps track of the volume level in your barrel. If you want to provide other people with access to your barrel (friends, family members, employees, etc.) you will need to agree to our “Responsibility Waiver,” and instruct your guests to provide your name and barrel number to the server.

TIPS & SURCHARGES - A 20% gratuity, for the server, will be charged to you at each transaction. If the spirit is served neat, no other charge will be made. If the transaction calls for a mixed drink, there will be no charge for the spirit but a surcharge will be added for the mixers at rates set by the Proprietor.

LEAKS & BREAKAGE – The Proprietor will do their best to monitor for leaks. If a leak is detected, the Proprietor will contact the customer and replace any leakage, as estimated by the Proprietor. NATURAL CORK STOPPERS IN THE BARREL ALLOW SOME SPIRIT EVAPORATION.

ABANDONMENT – Proprietor puts a limit on the amount of time Customer has to enjoy the spirit in their barrel. At any time that a barrel has not been accessed by Customer for more than 3 months, it is considered abandoned. Proprietor will contact the Customer to discuss the disposition of the abandoned spirit. If the customer does not respond or Proprietor and Customer cannot come to an agreement on the use of the abandoned spirit in a timely fashion, the spirit is forfeited to Proprietor and Proprietor reserves the right to sell the contents of the barrel, with proceeds from the sale going to the Pawcatuck Neighborhood Center, a non-profit 501c3 charity food bank.  No refund will be due to Customer. Customer hereby agrees that this transaction is on a use-it-or-lose-it basis, and that Customer hereby releases Proprietor from any responsibility as a result of abandonment.

COMPLIANCE – All transactions and uses of the spirit in the mini-barrels must adhere to Connecticut law, which does not allow Customers to access the barrel directly or take the barrel home. The barrels can only be accessed by the Proprietor’s serving staff, and the mini-barrels must remain in Dive Bar at all times.
